Guara type
Spanish almonds are considered among the highest quality in the world. Unlike the mass-produced, industrial almonds from other regions (such as California), Spanish almonds stand out for several unique reasons:
Hard shell: Almost all Spanish varieties have a very hard, protective shell. This is a significant natural advantage, as it protects the kernel from pests, insects, and the elements, reducing the need for pesticides.
Higher essential oil content: They have a higher proportion of healthy fats. This results in a much juicier texture and an intense, concentrated, and oily flavor, ideal for fine pastry making.
Cleaner harvesting: Traditionally (and using umbrella-mounted harvesters), almonds in Spain are harvested without touching the ground. This drastically reduces the risk of microbiological contamination from soil bacteria.
Sustainability and dryland farming: Much of the cultivation in Spain is dryland farming and integrated into traditional ecosystems, which reduces the water footprint and makes the country the world's leading producer of organic almonds.
Our company works exclusively with the Guara type variety, which comprises the varieties planted in Spanish fields in recent decades. The Guara type includes 100% sweet varieties of excellent quality such as Guara, Lauranne, and Penta.

Organic almonds
Our company is certified as an organic industry by the CAAE (Andalusian Committee for Organic Agriculture).
The CAAE is the certification body specializing in organic production that certifies the most hectares in Europe.
Since 1991, they have provided certification and control services for the agri-food sector. The role that CAAE has played in the development of organic production in Spain is undeniable, contributing to the professionalization and increased value of certified organic products in our country. They were pioneers in the certification of organic production and in the creation of standards for the development of the sector, such as organic aquaculture, and the restaurant and retail sectors under the CAAE brand.
CAAE is authorized by the Competent Authorities of the Autonomous Communities of Andalusia, Castile-La Mancha, and Castile and León.
They are accredited by the National Accreditation Entity (ENAC) under the UNE-EN-ISO/IEC 17065:2012 standard for organic production (plant products, animal products, aquaculture), processed products for human and animal consumption, and Global GAP (fruits and vegetables), as detailed in the current technical annex.
Furthermore, they are accredited by the USDA (United States Department of Agriculture) for certification activities under the NOP (National Organic Program) standards
